Equipment

  • Stand mixer fitted with the paddle attachment or electric hand mixer
  • Large mixing bowl
  • Medium mixing bowl
  • Kitchen scale, optional
  • Large cookie scoop
  • Baking sheets
  • Parchment paper or silicone baking mats
  • Wire cooling rack

Ingredients

  • 1 cup 2 sticks unsalted butter, softened
  • 1 cup granulated sugar
  • 1½ cups packed brown sugar
  • 2 large eggs room temperature
  • ½ teaspoon mint extract
  • Green gel food coloring about ½ to 1 teaspoon or as needed
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 teaspoons salt
  • 3 cups semisweet chocolate chips
  • 2 cups roughly crushed Oreo cookies

Instructions

Cream the Butter and Sugars

  • Add the softened butter, granulated sugar, and brown sugar to the bowl of a stand mixer fitted with the paddle attachment.
  • Beat on medium speed for about 2 to 3 minutes, scraping down the sides and bottom of the bowl as needed, until light and creamy.

Add the Eggs, Mint, and Color

  • Add the eggs one at a time, mixing well after each addition.
  • Add the mint extract.
  • Add the green gel food coloring, beginning with about ½ teaspoon.
  • Mix until the color is evenly distributed. Add additional green coloring a small amount at a time until the dough reaches a vibrant Frankenstein-green shade.

Combine the Dry Ingredients

  • In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
  • With the mixer on low speed, gradually add the dry ingredients to the butter mixture.
  • Mix only until the flour is mostly incorporated.

Add the Chocolate Chips and Oreos

  • Add the chocolate chips and crushed Oreos.
  • Fold them into the dough with a rubber spatula until evenly distributed, being careful not to overmix.

Portion the Jumbo Cookies

  • Divide the dough into approximately 10 large portions.
  • Shape each portion into a thick, slightly tall ball rather than flattening it. This helps the cookies stay thick as they bake.
  • Place the cookies on parchment-lined baking sheets, leaving at least 3 inches of space between each cookie.
  • Press a few additional chocolate chips or Oreo pieces into the tops for a bakery-style finish, if desired.

Bake

  • Preheat the oven to 375F
  • Bake the cookies for approximately 11 to 14 minutes, depending on their size.
  • The edges should look set while the centers remain slightly soft.
  • Avoid baking until the centers look completely firm. The cookies will continue cooking as they rest on the hot baking sheet.

Cool

  • Allow the cookies to cool on the baking sheet for 10 to 15 minutes.
  • Transfer to a wire cooling rack and cool completely before adding any Frankenstein decorations.

Notes

Green food coloring: Gel food coloring is preferable to liquid coloring because it gives you a much stronger green without adding excess liquid to the cookie dough. Make the unbaked dough slightly brighter than your desired finished color, since the cookies may darken slightly in the oven.
Cookie size: Since the original batch gives you about five relatively large cookies, this doubled version should give you approximately 10 cookies of the same size.
Mint flavor: The ½ teaspoon of mint extract gives the doubled batch a noticeable but balanced mint flavor. Mint extract is strong, so I would not increase it much beyond this.
Keep the Oreos chunky: Crush the Oreos into irregular pieces instead of fine crumbs so you still get visible cookies-and-cream pieces throughout the green dough.
For the Frankenstein look: Once cooled, you can add candy eyes and use melted chocolate or black icing to create Frankenstein hair, a stitched mouth, eyebrows, and scars.
