Peach Margarita

Nothing says summer in Georgia quite like a perfectly ripe peach. Sweet, juicy, and fragrant, peaches are one of those ingredients that don’t need much to shine. Pair them with delicate elderflower, fresh lime juice, and a homemade infused simple syrup, and you have a margarita that feels just as at home on a front porch as it does at a backyard dinner party.

This month’s collaboration with LEVO inspired me to step outside of baking for a moment and create something that still celebrates homemade ingredients. Instead of reaching for a store-bought flavored syrup, we’re making our own elderflower simple syrup using the LEVO infuser. It’s an easy extra step that completely transforms the cocktail, giving it a light floral flavor that’s elegant without tasting overly sweet.

The result is a refreshing Georgia Peach Elderflower Margarita finished with LEVO Edible Shimmer for a subtle golden sparkle. It’s bright, citrusy, slightly floral, and perfectly balanced—everything I want in a summer cocktail.

Ingredients

LEVO Elderflower Simple Syrup

  • 1 cup granulated sugar
  • 1 cup filtered water
  • ½–¾ cup dried elderflowers
  • Pinch of sea salt

Georgia Peach Elderflower Margarita

  • 4 oz blanco tequila
  • 2 oz fresh peach purée
  • 2 oz fresh lime juice
  • 1½ oz homemade LEVO Elderflower Simple Syrup
  • 1 oz Cointreau or Triple Sec
  • ⅛–¼ teaspoon LEVO Edible Shimmer
  • Ice

For the rim

  • Tajín
  • Flaky sea salt
  • Optional freeze-dried peach powder

For garnish

  • Fresh peach slices
  • Lime wheel
  • Edible flowers

How to Make the Elderflower Simple Syrup

Start by making a classic simple syrup. In a small saucepan, combine the sugar, water, and a pinch of sea salt over medium heat, stirring just until the sugar dissolves. There’s no need to boil the mixture.

Allow the syrup to cool slightly before pouring it into your LEVO reservoir. Fill the herb pod with dried elderflowers and infuse at 150°F for 45–60 minutes. Once the infusion is complete, remove the herb pod, let the syrup cool completely, and transfer it to a sealed glass bottle. Stored in the refrigerator, it will keep for about three weeks.

How to Make the Margarita

Rim two glasses with lime juice before dipping them into a mixture of Tajín and flaky sea salt.

Fill a cocktail shaker with ice, then add the tequila, peach purée, fresh lime juice, elderflower simple syrup, orange liqueur, and LEVO Edible Shimmer. Shake vigorously until the outside of the shaker becomes icy cold.

Fill the prepared glasses with fresh ice and strain the cocktail over the top. Garnish with fresh peach slices, a lime wheel, and edible flowers. Give the drink one gentle swirl before serving to bring the shimmer to life.

Baking (and Cocktail) Tips

Use ripe peaches.

Since peaches are the star of this recipe, choose fruit that’s fragrant and slightly soft when gently squeezed. Ripe peaches create a naturally sweeter cocktail with better flavor and a smoother texture.

Fresh lime juice makes all the difference.

Bottled lime juice simply doesn’t compare. Freshly squeezed juice provides brighter acidity that balances the sweetness of the peach and floral syrup beautifully.

Don’t skip the elderflower infusion.

Infusing the syrup rather than simply adding elderflower liqueur gives you complete control over the flavor. The floral notes remain delicate and natural while allowing the peach to stay front and center.

Shake longer than you think.

A full 20–30 second shake not only chills the cocktail but also incorporates the peach purée and edible shimmer evenly throughout the drink.

Stir before sipping.

Edible shimmer naturally settles over time. A quick swirl or gentle stir before each sip brings back that beautiful golden sparkle.

Easy Recipe Variations

For a frozen version, blend all of the cocktail ingredients with two cups of ice until smooth.

If you prefer a lighter cocktail, top each glass with a splash of sparkling water after straining.

Looking for extra heat? Add a few slices of fresh jalapeño to the shaker before mixing.

For a mocktail, simply replace the tequila and orange liqueur with sparkling peach water or club soda for an equally refreshing summer drink.

  • 2 oz fresh lime juice
  • 1 oz Cointreau or Triple Sec
  • 1 1/2 oz Elderflower Simple Syrup
  • Ice
  • Sugar Rim
  • Sugar
  • Garnish
  • Fresh peach slices
  • Lime wheel

Instructions
 

Elderflower Simple Syrup

  • In a small saucepan, combine the sugar, and water over medium heat. Stir just until the sugar has completely dissolved. Do not boil.
  • Remove from the heat and allow the simple syrup to cool for about 10–15 minutes, until warm but not piping hot.
  • Fill the LEVO herb pod with the dried elderflowers.
  • Pour the warm simple syrup into the LEVO reservoir.
  • Infuse at 150°F for 2 hours, allowing the floral notes of the elderflower to gently steep into the syrup.
  • Remove the herb pod and let the syrup cool completely.

Assemble Drink

  • Rim two glasses with lime juice and dip into the Tajín mixture.
  • Fill a cocktail shaker with ice.
  • Add the tequila, peach purée, lime juice, elderflower simple syrup, Cointreau
  • Shake vigorously for 20–30 seconds until well chilled.
  • Strain over fresh ice.
  • Garnish with a peach slice and OR lime wheel.
