Homemade Bagels (New York Style)

Soft, Chewy, Bakery-Style Bagels Made Completely From Scratch

There is something incredibly satisfying about pulling a tray of homemade bagels from the oven. The golden crust, the chewy interior, the aroma of toasted garlic and onion, and that first warm bite covered in a generous layer of creamy spread—it is one of those baking experiences that makes your kitchen feel like your favorite neighborhood bakery.

If you’ve always thought making bagels from scratch sounded intimidating, you’re not alone. Many home bakers assume they require complicated techniques or professional equipment, but they’re actually much simpler than most people realize. The biggest secret is understanding a few key techniques, like using bread flour, boiling the dough before baking, and giving your dough enough time to develop flavor.

These homemade everything bagels have everything you want in a classic New York-style bagel. They’re chewy without being tough, perfectly golden on the outside, soft on the inside, and loaded with crunchy sesame seeds, garlic, onion, and poppy seeds in every bite. Better yet, they’re incredibly versatile. Enjoy them toasted with cream cheese, piled high with eggs and bacon for breakfast, or, my personal favorite, spread with a rich Everything Bagel Aioli that takes every bite to the next level.

Whether this is your first time making bagels or your fiftieth, this recipe is designed to give you bakery-quality results right from your own kitchen.

Why You’ll Love These Homemade Everything Bagels

These bagels have everything I look for in a homemade bread recipe.

Unlike many store-bought bagels that can become overly dense or dry, these stay soft inside while maintaining that signature chewy bite thanks to the bread flour and quick honey boil. The homemade everything seasoning creates layers of texture and flavor, while the slightly sweet dough balances the savory toppings perfectly.

They’re also surprisingly affordable to make at home. A batch of eight bakery-quality bagels costs only a fraction of what you’d spend buying them fresh, and they freeze beautifully for busy mornings.

Even better, once you’ve mastered the basic dough, you can easily customize them into sesame, asiago, cinnamon raisin, jalapeño cheddar, or plain bagels using the exact same recipe.

The Secret to Chewy Homemade Bagels

One of the most common questions people ask is:

“Why don’t my homemade bagels taste like bakery bagels?”

The answer usually comes down to three simple things.

1. Bread Flour Makes the Difference

Bread flour contains more protein than all-purpose flour, creating stronger gluten development. That stronger gluten is what gives bagels their signature chewy texture rather than a soft sandwich bread consistency.

If you substitute all-purpose flour, your bagels will still be delicious, but they’ll be noticeably softer.

2. Never Skip the Boiling Step

Boiling the dough is what separates bagels from regular bread.

The hot water quickly gelatinizes the outside starches before baking, creating that glossy crust while preventing the bagels from expanding too much in the oven.

This results in the dense yet chewy texture everyone loves.

Adding honey and brown sugar to the boiling water also encourages deeper caramelization and gives the finished bagels a beautiful golden color.

3. Don’t Underbake

Many home bakers remove their bagels from the oven too early.

A deep golden brown crust isn’t just about appearance—it develops richer flavor and creates the perfect contrast between the crisp exterior and soft interior.

If they look lightly golden, give them another few minutes.

Tips for Making Perfect Bagels Every Time

Measure by Weight Whenever Possible

Flour is one of the easiest ingredients to accidentally overmeasure.

Using a kitchen scale produces more consistent results and prevents dry dough.

Don’t Rush the Rise

Yeast needs time to develop flavor.

If your kitchen is cool, your dough may need closer to 90 minutes instead of one hour.

Waiting for the dough to double is always more important than watching the clock.

Make the Center Hole Bigger Than You Think

As bagels bake, the dough expands.

If your center hole is too small before baking, it may disappear completely in the oven.

Aim for about a two-inch opening before boiling.

Press the Seasoning Into the Dough

After brushing with egg wash, gently press the seasoning mixture into the surface.

This helps prevent it from falling off while slicing later.

Let Them Cool

Fresh bagels continue cooking internally after they leave the oven.

Allowing them to cool for about twenty minutes helps create the best texture before slicing.

Delicious Ways to Serve Everything Bagels

These homemade bagels are delicious all on their own, but they’re also the perfect base for breakfast or lunch.

Some of my favorite combinations include:

  • Everything Bagel Aioli with crispy bacon
  • Fried egg, cheddar cheese, and avocado
  • Smoked salmon with cucumber and red onion
  • Turkey, spinach, and tomato
  • Classic whipped cream cheese
  • Garlic herb cream cheese with fresh dill

If you’re hosting brunch, slice them in half and create a DIY bagel board with different spreads, meats, cheeses, and fresh vegetables so everyone can build their own.

Storage Tips

Homemade bagels don’t contain preservatives, which means they’re best enjoyed fresh.

Store them in an airtight container or bread bag at room temperature for up to three days.

Avoid refrigerating them, as refrigeration actually causes bread to become stale more quickly.

For longer storage, freeze individual bagels in freezer-safe bags for up to three months.

When ready to enjoy, simply thaw and toast until warm.

Frequently Asked Questions

Why didn’t my bagels rise?

Old yeast is the most common reason.

Always check that your yeast becomes foamy during activation. If it doesn’t, it’s likely expired or your water was either too hot or too cold.

Why are my bagels flat?

Flat bagels are often caused by over-proofing.

If the dough rises for too long, the gluten weakens and can’t support the structure during baking.

Can I make the dough ahead of time?

Absolutely.

After shaping the bagels, cover them and refrigerate overnight.

The next morning, simply boil and bake as directed.

The overnight rest actually develops even more flavor.

Can I use instant yeast?

Yes.

Instant yeast can be mixed directly with the dry ingredients, eliminating the need for activation.

Use the same amount called for in the recipe.

Why is boiling so important?

Without boiling, you’ll end up with bread rolls shaped like bagels rather than authentic bagels.

The boil creates the signature chewy crust that makes bagels unique.

The combination of toasted sesame seeds, garlic, onion, and poppy seeds creates the classic everything bagel flavor we all know and love, while the honey boil gives each bagel its beautiful shine and signature chew. Paired with a generous layer of Everything Bagel Aioli, every bite is savory, creamy, and packed with flavor.

Whether you’re making breakfast for your family, meal prepping for the week, or simply challenging yourself to bake something new, this recipe is one you’ll come back to again and again. Homemade bagels freeze beautifully, taste even better fresh from the toaster, and prove that some of the best bakery treats can be made right in your own kitchen.
